Sous Chef

The Sous Chef will report to the Executive Chef and will hold responsibilities in the following areas:

  • Overseeing quality of all food prepared for breakfast, dinner, or special events.
  • Food purchasing and preparation
  • Day to day food preparation
  • Overseeing quality standards
  • Kitchen organization, sanitation and cleanliness
  • Training and coaching of employees in methods of cooking, preparation, plating, portion and cost control, and sanitation/cleanliness.

Cook – AM & PM

  • Prepares a variety of meats, seafood, poultry, vegetables, sauces, and other food items for cooking in broilers, ovens, grills, fryers and a variety of other kitchen equipment.
  • Knows and complies consistently with our standard portion sizes, cooking methods, quality standards, and kitchen rules, policies and procedures.
  • Stocks and maintains sufficient levels of food products at line stations to assure a smooth service period.
  • Maintains a clean and sanitary work station area including tables, shelves, grills, broilers, fryers, pasta cookers, sauté burners, convection oven, flat top range and refrigeration equipment.
  • Prepares item for broiling, grilling, frying, sautéing or other cooking methods by portioning, battering, breading, seasoning and/or marinating.
  • Follows proper plate presentation and garnish set up for all dishes.
  • Handles, stores and rotates all products properly.

Host/Hostess – AM

Full time position available.

Duties include:

  • Welcome and great guests. Make all of our guests feel comfortable.
  • Make recommendations you genuinely feel your guests will enjoy. Answer questions about our food, beverages and other restaurant functions and services.
  • Perform side work. Make restaurant reservations using OpenTable.

Line Cook – PM

Full time position available.

Candidates must have previous line cook experience and preferably a skillset that is able to handle a variety of cooking techniques. This is your opportunity to enhance your skills in Hawaii’s only Relais & Châteaux kitchen.

Line Cooks are responsible for preparing all mis-en-place for their assigned stations and working service. Minor butchery skills needed. Teamwork and communication are mandatory and successful candidates must be able to adjust timing of dishes to coincide with other stations.

Line cooks will work directly with Sous Chefs and the Chef de Cuisine. Chefs will monitor all work habits and techniques and offer feedback to ensure consistent excellence in quality. Line Cooks are responsible for setting up, breaking down, and cleaning their stations and work areas. All kitchen employees are required to work cleanly, efficiently, and intelligently.

Assistant Restaurant Manager

The Assistant Restaurant Manager reports to the Restaurant General Manager and is responsible for overseeing the day to day operations of the food and beverage program. An ideal candidate for this position will have at least 4 years of experience in food and beverage, or related professions.

  • Responsible for achieving the highest level of guest satisfaction while creating a fun, professional, and productive working environment for all staff.
  • Leads by example and is educated on luxury resort service standards.
  • Ensures that regular and accurate communications is occurring between f&b and all hotel departments.
  • Mentors and develops staff.
  • Creates monthly interactive staff training programs involving wine, spirits, cocktail making, and coffee.
  • Promptly gives praise and or constructive feedback.
  • Serves as a role model for service standards and guest interactions.
  • Checks the quantity and quality of all f&b related inventory and informs the Restaurant GM of any items that need to be ordered.
  • Monitors all Front and Back of the House areas to ensure they are clean and organized at all times.
  • Monitors and supports hourly staff by maintaining floor presence during restaurant service.

Breakfast Hostess

Duties include: greeting guests, seating tables using Open Table. Strong computer skills required.

 

Pastry Cook

Part-time position available. Previous baking or pastry experience required. Daily duties include: Preparing breads, desserts, pastries, cakes, cookies, muffins, fruit compotes, guest amenity orders and banquet event orders in accordance with production requirements and quality standards while maintaining a safe, sanitary work environment.

Garde Manger

Full time position available. This is your opportunity to enhance your skills in Hawaii’s only Relais & Châteaux kitchen.

Duties & Responsibilities

  • Preparing, and presenting cold foods, such as salads, cold soups, meats and cheeses.
  • Knife skills – cutting, chopping, carving, dicing.
  • Responsible for inventory, preparation and presentation of select dishes and food items.
  • Also perform other duties in the areas of food and final plate preparation including plating and garnishing of cooked items and preparing appropriate garnishes for all hot menu item plates.

We are experiencing a strong Fall and Winter demand for our all-suite experience at Hotel Wailea. We encourage you to book early with renewed Winter demand.

We will contribute $100 for each booking made through September 30th, 2023 to West Maui relief efforts.

• All parties of 9 or more are REQUIRED to make a reservation at least 24 hours in advance by calling 808-879-2224. Reservations will be held with a credit card with a $25 per person charge for no-shows.  

• A maximum of 16 guests will be accommodated.  

• Large parties (9-16 guests) will be subject to an automatic 21% service charge.  The final bill may only be split a maximum of 2 ways.  

• Large group reservations availability will be handled on a first come-first served basis as we have limited space for large groups. 

• Large groups without reservations will only be accommodated by splitting groups up based on table availability. Tables and chairs may NOT be moved or added to accommodate.  We may not be able to accommodate large groups without a reservation.
